This falls firmly into the category of "unusual ways to cook salad". We’d love to know what you think of it.
Ingredients:
(Serves 4)
280ml cold water
75g wild rice
20g dried currants
1 glass hot water
1 head of curly endive
20ml extra-virgin olive oil
1/2 small onion, thinly sliced
2 garlic cloves, minced
1/2 tablespoon fresh lemon juice
1/2 teaspoon finely grated lemon zest
Salt and freshly ground pepper
Method
- Preprepare the currants by soaking them in the hot water for 10 minutes. and draining.
- Bring the cold water to a boil in a saucepan. Add the wild rice and a large pinch of salt, cover and simmer until tender, (approx 30 minutes). Drain.
- While the rice is cooking, cook the endive leaves until tender (approx 4 mins) in a pot of boiling salted water, Drain and cool. Squeeze the leaves dry and chop roughly.
- Heat the olive oil in a large casserole dish. Add the onion and cook over low heat until softened (approx 5 minutes). Add the garlic and cook for around 3 minutes. Add the endive and currants and cook over a medium heat, stirring, for 2 to 3 minutes.
- Add the wild rice and cook until warmed through. Stir in the lemon juice and zest and season with salt and pepper.
Serve hot.

Heheheh! I have to say I am a little dubious too, but I’m going to try it … Suddenly and out of nowhere I’m wondering whether it would work, adding endive to a green smoothie mix?!
What sort of flavour does endive have? Is it pronounced Endeev or Endive? Just so I don’t faux pas when discussing them he he he
Hey Tepsy. I believe that the truly correct way of pronouncing it is “on-deev”, but I always say “en-dive”. As for the flavour – the outer leaves are valued for their sharp slightly bitter taste, whilst the inner more tender leaves are milder. I think the picture looks like rows of green clown wigs, so perhaps for those who don’t like endive, and given that it’s April 1st, they could be used as headwear
Ah yes, soups and smoothies – those are my answer to everything inedible. I would add a little to a smoothie and see how you get on. It might be just the ticket!
