Come June, cherries and strawberries will be in season together in the UK.
Now cherries and strawberries are delicious in their own right. But if you combine them … Well, as far as I’m concerned that’s heaven on earth.
Ingredients:
Serves 4
Enough cherries and fresh strawberries for 4 people
150ml double cream
1 tablespoon (15ml / ½ ounce) sugar
4 sprigs fresh mint (optional)
2 tablespoons Pimms or brandy (optional)
Method:
Remove the stalks from the cherries. Wash well. Stone them – cut in half and remove it or use a cherry stoner.
Wash the strawberries. Remove the green hull. Slice as preferred.
Unless the fruit is really sweet, put it in a bowl and sprinkle the sugar over it, add the Pimms / brandy and mix.
Leave for an hour at room temperature. This allows the juices to be released, to form a sauce.
Whip the cream until it forms soft peaks. Spoon over the fruits and serve with the sprig of mint and a few strawberries to garnish.
