Ideas for British Sandwich Week

Posted by: VegBox Recipes

This week is British Sandwich Week, and not that long ago, we asked you to let us know what your fave sandwiches are.

Here are the highlights for you to savour … And oh look, it’s lunch time!

1. Real Food Lover goes for pita bread stuffed, middle-eastern style, with humus and falafel, then filling every available space with fresh sprouts, such as alfafa or radish, and doused with olive oil.

Alternatively, a pita pocket filled with last night’s veg curry plus sprouts and/or grated carrots goes down a treat!

2. Heather’s fave veggie sandwich filling has to be almost anything with hummus – peppers with watercress is good, and she’s thinking of trying fennel.

3. Tracey likes flatbreads sutffed with whatever’s going….a little mayo, grated cheese and salad is divine…

Or, a mushed up banana, all bruised and sweet, with a drizzle of maple syrup…

4. Andrew goes for grated cheese, finely chopped spring onion and mayo; or diced celery, apple and mayo, especially on brown bread.

5. Rachelle likes doorsteps with feta cheese, any amount of salad – lettuce, cherry tomatoes, raddish, alfalfa – and some grated beetroot if it’s in season. She also likes homemade coleslaw with lots of apple, carrot and cabbage.

And the last word goes to Peter:

"For winter I’d go for a good rye bread – I’m fortunate to live not far from the Hexham farmers market where you can get the Moody Baker’s Rye Bread, which in my opinion is the best rye bread in the world (probaby). Add to that some decent cheese and some home made chutney. My favourites: Birdoswald Cheese and apple chutney. For summer I tend to go for a lighter bread – spelt is good. Keep the cheese but top of with a nice layer of lettuce – try growing Bronze Arrowhead. Scrumptious!"

Peter, we agree!

What a great roundup – I agree that rye bread is fabulous. I like the village bakery Rosinsky; really heavy and bitter and lovely when toasted.
