Tiny tip, from mrs Green’s garden – beetroot leaves

This week I shared a tip about not wasting your valuable lettuce thinnings.

Infact, we’ve been eating them all week at Chez Green and calling it ’salad’!

Today, my beetroot leaves are looking healthy and strong and I wanted to remind you that you can eat these too!

Tiny ones can be eaten raw in salads; they are lovely when served with assorted herbs as part of a main meal.

More mature beetroot leaves can be treated like spinach – shred them and wilt in a tiny amount of water, then toss in oil or butter.

You can use cooked beetroot leaves in lasagnes, bean salads, pasta dishes, curries or anywhere else you might use spinach!
