Wimbledon Juice

Posted by: VegBox Recipes

The first day of Wimbledon (21st June) is approaching fast.

If you’re planning on tuning in, and if the idea of coughing up for champagne is less than appealing, how about trying a British seasonal fruit juice perfect for mid-Summer?

We’ve called it Wimbledon Juice in honour of the sporting season.

When Can I Make This?

The main ingredients, strawberries and blackcurrants, are in season in the UK in June, July, August and possibly into September. You’ll be lucky to find dessert apples until August though, so you may need to use apple juice.

Ingredients

Serves 4

10 fresh strawberries
1 dessert apple (if available) or 150ml apple juice from a carton
2-3 tablespoons blackcurrants
½ cm fresh root ginger (optional)

Method

1. Wash all the fruits carefully.

2. Remove any blackcurrant stalks. Hull the strawberries.

3. If using, chop the apple into 4 chunks.

4. Peel the ginger root.

5. Juice the strawberries, then the blackcurrants, then the ginger and finally wash through with the apple / apple juice.

6. Pour over crushed ice and add a straw. Looks great in cocktail glasses!

Now all you need to do is decide who’s going to serve. Groan.
