No Ooffoo or VegBox Christmas series would be complete without a piece on using up those Christmas Day leftovers and avoiding food waste whilst having a truly delicious time.
The absolutely essential recipe for leftovers users is, of course, Bubble and Squeak. This recipe is the basic "Bubble for Beginners", with a Variations section for those of you hoping to do something a little different.
Other savoury recipes perfect for throwing leftovers into are soups (like Leek and Potato, or Celeriac and Carrot, or Winter Minestrone), risottos and (think a certain mayonnaise advert!) curries.
Or how about a classic pot pie, which is particularly good for freezing?
For those of us with a sweet tooth, having a tasty bread pudding recipe ear-marked will come in very handy to use up that loaf that would otherwise go on to sprout mould. We owe this one to our good friend Madelaine. As Madelaine suggests, and for a Christmas twist on this traditional favourite, try using beer, cider or (mulled?) wine in the recipe, adding nutmeg and / or cinnamon, or even adding grated chocolate.
