Anzac Cookies

These cookies are great for moulding into any shape you like, including runes (as suggested in my article Edible Runes). Remember to make your shapes thinner than you want them to end up as this mixture rises abundantly!

Anzac stands for Australian and New Zealand Army Corps. During the First World War, Australian and New Zealand soldiers became known as Anzacs. Anzac biscuits resemble those that were made by soldiers’ wives and sent out to them, or perhaps even made by the soldiers themselves with what ingredients they had. Some consider them Australia’s national biscuit. If you want to really honour the origin of these simple but incredibly tasty biscuits, make them on April 25th, Anzac day.

Anzac Biscuits Makes 18-20

Ingredients

  • 4oz/113g butter
    • 3oz/85g plain flour
    • 3oz/85g oats
    • 2oz/56g coconut
    • 1½oz/43g fructose
    • 2 tbs honey
    • 2 tbs hot water
    • 1 tsp ground ginger
    • ½ tsp bicarbonate of soda

1.  Mix the flour, oats, fructose, coconut and ginger together in a bowl.

2.  In a saucepan, melt the butter and honey together.

3.  Combine your two sets of ingredients.

4.  Dissolve the bicarbonate of soda in the water and stir evenly into your mixture.

5.  Allow to cool slightly before creating walnut-size balls from your mixture (or any shape you desire).

6.  Place the balls of mixture on a greased baking tray, patting them down to flatten them into biscuit shapes, and bake for 15-20 minutes at gas mark 4/180°C, until golden brown.

7.   Leave to firm up a little before removing from the tray and cooling on a wire rack. Store in an airtight container.
